{Apple Chicken Salad}

As mild Spring weather gives way to warmer days ahead,
there's nothing more refreshing than a cool,
crisp, chicken salad.




Tucked inside a chilled romaine leaf with
carrots and whole wheat crackers as companions
on the side....


...one can't help but welcome the sunshine's
warm rays coming through the windows.


I'd say it's the perfect compliment.

{Apple Chicken Salad}

2 Cups cubed, cooked chicken
1 Cup celery, chopped
1 Cup apples, chopped
1/2 cup soft raisins
1/2 cup pecans, chopped
Mayo, about 2/3 cup
Salt & pepper to taste
Dash of curry (or fav. seasoning)
1 rounded teaspoon light brown sugar

*Mix well & enjoy! :)
Would be delicious inside of a sandwich as well
with fruit on the side.

Looks delish...and healthy too...Mmmm!!! My favorite lunch would have to be, well, Chicken salad! I always loved it growing up...minus the mayo and loads of celery...but I think I'll have to try out your recipe. It looks totally yummy!!! Love you!

That does look delish!! I make chicken salad for the family I nanny for...one thing you can do is substitue plain non fat yogurt for mayo...like in stead of doing a all mayo, I do 3/4 yogurt 1/4 mayo...and it tastes just as good! I love curry seasoning in chicken salad!! My favorite summer lunch is fresh fruit, cheese, and crackers! :) i LOVE the way you decorate your meals.
